Dosai

Rice 4 cups
Black gram dal
(Udid / Ulundu)
1 cup
Fenugreek seeds 2 spoons
Salt to taste
Oil to fry

Soak rice and dal separately for 5 hours.

Grind Rice till it becomes rava. Spray water to make it as thick batter.
Separately Grind dal and Fenugreek as a paste through grinding. Spray water continuously to make it soft
After grinding, mix salt, dal batter  and rice batter add some more water if needed and keep overnight to ferment.
Make dosas on a hot griddle.
Use oil, golden brown dosa on both sides. Serve hot.
The thinner and crisper the dosa, the better it tastes.
Use Sambar, Chuttney, Kurma and/or Dosa chilly powder as side dish for dosai.
